Ingredients

Grain Bill

  • 2.7kg Crisp Europils Malt
  • 2.4kg Crisp Wheat Malt
  • 400g Acidulated Malt
  • 370g Crisp Flaked Torrifed Oats

Hops

  • 15g Bavaria Mandarina
  • 15g Bavaria Mandarina

– Tea Bags at 60 minutes and 10 minutes

Yeast

  • 1 x sachets M21 MJ Belgian Wit

Additives

  • 13g Coriander Seeds
  • 50g Orange Peel

Instructions for use

Fill the boiler with 19.3 litres of water and bring to a temperature of 50 degrees C.

Mash in by slowing pouring the grain into the boiler, stirring well to avoid any clumps – (Good practice to check your mash pH, your aiming for a range of 5.2-5.6)

Mash for 45 minutes at 50 degress, increase mash temperature to 68 degrees, continue mashing for 75 minutes

Sparge with 14.8 litres of water at 75 degrees.

Then bring the wort to a rolling Boil for 90 minutes, add hops as indicated on the hop bags, all our hop additions use t bag technology

-Add the 60 minute addition after boiling for 30 minutes then add the remaining as you count down in time and add the coriander and orange peel 10 minutes prior to the end of the boil

Transfer & Cool the wort to 18 degrees C into the fermenter and pitch the yeast

Fermentation will take place for approx. 7-10 days

Check that the gravity is below 1.020 then bottle or keg as normal
